  1. In a large bowl, combine cold water and gelatin; set aside.
  2. In a heavy saucepan over medium heat, mix sugar, corn syrup, water, and salt. Bring to a boil, stirring occasionally.
  3. Cover and cook for 2 minutes to dissolve the sugar crystals.
  4. Uncover and cook on medium-high heat without stirring until a candy thermometer reads 240°F (soft-ball stage).
  5. Remove from heat and gradually pour into the gelatin mixture.
  6. Beat on medium speed for 14 minutes. Add almond extract; beat 1 minute longer.
  7. Sprinkle 2 tablespoons confectioners' sugar into a greased 13x9-in. pan.
  8. With greased hands, spread marshmallow mixture evenly into the prepared pan.
  9. Top with 2 tablespoons confectioners' sugar. Cover and let cool at room temperature for 6 hours or overnight.
  10. Cut out 15 marshmallows using a cookie cutter. Toss in remaining confectioners' sugar.
  11. Press a lollipop stick gently into each marshmallow. Store in an airtight container.
