Braciole is a thinly pounded flank steak rolled with a flavorful filling of bread crumbs, Parmesan, garlic, and herbs. Braised in a tomato sauce until tender, it’s a crowd-pleaser that pairs wonderfully with pasta or crusty bread.

Flatten the flank steak to ½-inch thickness and rub with 1 tbsp olive oil.

In a bowl, combine bread crumbs, parsley, Parmesan cheese, garlic, oregano, ¼ tsp salt, and ¼ tsp pepper.

Spread the mixture over the steak, leaving a 1-inch border around the edges.

Roll the steak jelly-roll style, starting with the long side, and secure with kitchen twine.

Heat 3 tbsp olive oil in a Dutch oven and brown the steak on all sides.

Remove the steak, sauté the onion until tender, and add tomato sauce, water, Italian seasoning, sugar, and the remaining salt and pepper.

Return the steak to the pot, bring to a boil, then reduce heat. Cover and simmer for 70–80 minutes, occasionally spooning sauce over the steak.
