Description

These banana bread pancakes combine the classic flavors of banana bread with the ease of pancakes.

Made with mashed bananas, and warm spices, and cooked in butter, they deliver a crispy outside and a tender inside.

Perfect for breakfast or brunch, they’re ready in minutes and taste amazing with a drizzle of maple syrup.

Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • A pinch of ground cloves
  • 2 very ripe bananas, mashed
  • 1 large egg
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, for cooking
Instructions
  1. In a bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, and cloves.
  2. In a separate bowl, combine mashed bananas, egg, milk, and vanilla extract until smooth.
  3. Gently mix the wet ingredients into the dry ingredients until just combined. Do not overmix.
  4. Heat a skillet over medium heat and add a small amount of butter.
  5. Scoop 1/4 cup of batter onto the skillet for each pancake, spreading gently.
  6. Cook undisturbed until bubbles form on the surface, about 2-3 minutes.
  7. Flip and cook the other side until golden brown, about 2 minutes.
  8. Repeat with remaining batter, adding more butter as needed.
  9. Serve warm with your favorite toppings like maple syrup or sliced bananas.

Note
