Ingredients
  • 1 ¼ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon white sugar
  • ½ teaspoon salt
  • 1 cup milk
  • 1 egg
  • ½ tablespoon butter, melted and slightly cooled
  • 1 lemon, zested
  • 2 teaspoons oil, or as needed
  • 1 cup frozen blueberries, thawed
Instructions
  1. In a large bowl, sift together the flour, baking powder, sugar, and salt.
  2. In a small bowl, whisk together the milk and egg. Slowly add this mixture to the dry ingredients, stirring until smooth.
  3. Mix in the melted butter and lemon zest until well incorporated.
  4. Heat a lightly oiled griddle or skillet over medium-high heat.
  5. Pour ¼ cup of batter onto the griddle for each pancake. Add a few blueberries on top of the batter.
  6. Allow the pancakes to cook until bubbles form on the surface and the edges look dry, about 3–4 minutes.
  7. Flip the pancakes and cook for another 2–3 minutes until golden brown.
  8. Repeat with the remaining batter and blueberries.
