Ingredients
  • 1 medium butternut squash, peeled, seeded, and cubed (2 to 3 pounds)
  • 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 2 cups 2% milk
  • 3 large eggs
  • 2 tablespoons butter, melted
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
Instructions
  1. Place the cubed squash in a large saucepan, cover with water, and bring to a boil.
  2. Lower the heat, cover, and simmer for 8–10 minutes until tender. Drain well.
  3. In a large bowl, mash the squash thoroughly.
  4. Mix in the flour and sugar until smooth.
  5. Beat in the milk, eggs, and melted butter until fully incorporated.
  6. Pour the mixture into an ungreased 2-1/2 quart baking dish.
  7. Sprinkle the top with salt, cinnamon, and nutmeg.
  8. Bake at 350°F for 55–65 minutes or until the center is set.
  9. Allow the custard to rest for 10 minutes before serving.
