Add goat cheese, chopped shallot, minced thyme, lemon zest, sage, salt, nutmeg, and pepper. Mix until well combined.
5 Spoon about 1 tablespoon of filling into each cooled shell. Garnish with fresh thyme leaves.
6 Refrigerate any leftovers.
