Description

These easy carrot cake pancakes are dairy-free, gluten-free, and naturally sweetened.

Perfect for a cozy breakfast, they’re packed with oats, shredded carrots, walnuts, and raisins, offering a healthy twist on a classic dessert flavor.

Ingredients
  • ½ cup unsweetened applesauce
  • 2 eggs
  • ⅓ cup unsweetened almond milk (or any milk of choice)
  • 1 tsp vanilla extract
  • 1 tbsp pure maple syrup
  • cups old-fashioned rolled oats (gluten-free, if needed)
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 1 cup shredded carrots
  • ¼ cup chopped walnuts or pecans
  • 3 tbsp raisins
  • Olive oil or coconut oil (for cooking)
Instructions
  1. Add applesauce, eggs, almond milk, vanilla extract, maple syrup, oats, baking powder, cinnamon, nutmeg, and salt to a blender. Blend until smooth, about 1 minute.
  2. Stir in shredded carrots, walnuts, and raisins (do not blend).
  3. Heat a griddle or nonstick skillet over medium heat and coat lightly with oil.
  4. Pour ⅓ cup batter onto the pan for each pancake. Spread it gently into a circle.
  5. Cook for 2–4 minutes until the edges form bubbles and the pancake puffs slightly.
  6. Flip and cook the other side until golden brown, about 2 minutes.
  7. Repeat with the remaining batter, adding oil to the pan as needed.
  8. Serve warm with almond butter, cream cheese, yogurt, or a drizzle of maple syrup.
