Instructions

Stir milk and vinegar together in a bowl; set aside until milk "sours" (about 5 minutes).

In a separate bowl, mix flour, white sugar, baking powder, baking soda, and salt.

Whisk egg, melted butter, and vanilla extract into the milk mixture.

Slowly pour the milk mixture into the flour mixture, stirring until just moistened. It's okay if there are lumps.

In a small bowl, combine brown sugar, melted butter, and cinnamon.

Place the cinnamon mixture into a resealable bag and refrigerate for about 10 minutes until thickened.

Mix butter and cream cheese together in a microwave-safe bowl. Heat for 40 seconds, stir, and continue heating until smooth. Stir in confectioners' sugar and vanilla extract to make the icing.

Heat a griddle or skillet over medium heat and spray with cooking spray.

Pour about 2/3 cup of batter onto the griddle. Cook until bubbles form (2-3 minutes).

Cut one corner of the cinnamon mixture bag and swirl it over the pancake.

Flip the pancake and cook for another 2-3 minutes until browned.

Drizzle the cream cheese icing over the pancake.

Repeat with the remaining ingredients, spraying the griddle with cooking spray between each pancake.
