Description

Coconut Yule Trees are mini coconut bites shaped like holiday trees. With a soft, chewy coconut base and a chocolate-coated "trunk," these festive treats are decorated with frosting and sprinkles to resemble twinkling Christmas trees.

Ingredients
  • 3 cups sweetened shredded coconut
  • 2 cups confectioners' sugar
  • 1/4 cup butter, softened
  • 1/4 cup half-and-half cream
  • 1 teaspoon almond extract
  • 2 ounces 2–4 dark chocolate candy coating
  • Vanilla frosting
  • Green sugar and assorted sprinkles
Instructions
  1. In a large bowl, mix coconut, sugar, butter, half-and-half cream, and almond extract until fully combined.
  2. Drop spoonfuls of the mixture onto a waxed paper-lined baking sheet.
  3. Cover and refrigerate for 1 hour.
  4. Shape chilled mixture into tree forms and return to the baking sheet.
  5. Melt chocolate coating in the microwave and stir until smooth.
  6. Dip or spoon the chocolate onto the trunks of each tree, allowing excess to drip off.
  7. Place on waxed paper and let set.
  8. Decorate with frosting, green sugar, and sprinkles as desired.
