  1. In a shallow bowl, combine crushed cornflakes, poultry seasoning, paprika, salt, thyme, and pepper.
  2. Pour fat-free evaporated milk into another shallow bowl.
  3. Dip each chicken breast into the milk, then coat thoroughly with the cornflake mixture.
  4. Heat canola oil in a large nonstick skillet over medium heat.
  5. Cook chicken for 6-8 minutes on each side, or until a thermometer reads 170°.
  6. While chicken cooks, melt butter in a small saucepan over medium heat.
  7. Stir in flour, pepper, and salt until smooth.
  8. Gradually add the milk, chicken broth, and sherry, stirring constantly.
  9. Bring the gravy to a boil and cook for 1-2 minutes until it thickens.
  10. Stir in the minced chives.
  11. Serve the chicken with the gravy on top.
