Country Chicken and Gravy
This recipe gives you a lighter version of traditional country chicken and gravy, without compromising on taste.
With crispy chicken breasts coated in seasoned cornflakes and a smooth, creamy gravy, it’s the perfect comfort food for any occasion.

In a shallow bowl, combine crushed cornflakes, poultry seasoning, paprika, salt, thyme, and pepper.

Pour fat-free evaporated milk into another shallow bowl.

Dip each chicken breast into the milk, then coat thoroughly with the cornflake mixture.

Heat canola oil in a large nonstick skillet over medium heat.

Cook chicken for 6-8 minutes on each side, or until a thermometer reads 170°.

While chicken cooks, melt butter in a small saucepan over medium heat.

Stir in flour, pepper, and salt until smooth.

Gradually add the milk, chicken broth, and sherry, stirring constantly.

Bring the gravy to a boil and cook for 1-2 minutes until it thickens.
