Ingredients
  • 4 packages fresh spinach, trimmed (10 oz each)
  • 2 tbsp butter
  • 2 medium onions, finely chopped
  • 3 tbsp all-purpose flour
  • 1 tsp salt
  • ½ tsp white pepper
  • 2 cups whole milk
  • ½ cup heavy whipping cream
  • ½ cup grated Parmesan cheese
Instructions
  1. Place a steamer basket over 1 inch of boiling water in a large pot. Add a portion of the spinach, cover, and steam for 3–4 minutes until wilted. Drain and repeat with the remaining spinach.
  2. When the spinach has cooled, squeeze out excess liquid and coarsely chop.
  3. Heat butter in a large pan over medium-high heat. Add onions and cook until soft and translucent.
  4. Stir in flour, salt, and pepper until combined, then gradually whisk in milk and cream.
  5. Bring the mixture to a boil, stirring constantly, and cook until thickened (1–2 minutes).
  6. Add parmesan cheese, stirring until melted, and fold in the chopped spinach. Heat through and serve warm.
