Ingredients
  • 1 pork loin crown roast (10-12 ribs, about 6-8 pounds)
  • 1/2 teaspoon seasoned salt
  • Mushroom Dressing
  • 1/4 cup butter, cubed
  • 1 cup sliced fresh mushrooms
  • 1/2 cup diced celery
  • 3 cups cubed day-old bread
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/3 cup apricot preserves
  • 1 cup whole fresh cranberries (optional, for garnish)
Instructions
  1. Preheat oven to 350°F. Place roast, rib ends up, in a shallow roasting pan and sprinkle with seasoned salt. Cover rib ends with foil.
  2. Bake, uncovered, for 1 hour and 15 minutes.
  3. While roasting, melt butter in a skillet over medium-high heat. Add mushrooms and celery, sauté until tender, then stir in bread cubes, salt, and pepper.
  4. Remove roast from oven. Spoon mushroom dressing around it. Brush the sides of the roast with apricot preserves.
  5. Return to oven and bake until a meat thermometer inserted into the thickest part reads 145°F, about 45-60 minutes.
  6. Let the roast stand for 10 minutes before slicing. If desired, thread cranberries on a string and loop around rib ends for garnish.
  7. Slice between ribs to serve.
