Ingredients
  • 1 tbsp Almond paste
  • 3/4 cup Granulated sugar
  • 1 tbsp Unsweetened cocoa powder
  • 1 teaspoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1 dash Ground cloves
  • 2 Large egg whites (At room temperature)
  • 2 tbsp Molasses
  • 1 cup Pearl or coarse sugar (For coating)
Procedure for the Recipe
  1. Preheat your oven to 375°F.
  2. Break the almond paste into chunks and add it to a food processor. Combine with sugar, cocoa powder, and spices by pulsing until evenly mixed.
  3. Pour in the egg whites and molasses, then blend until smooth.
  4. Using a tablespoon, drop the dough into the pearl sugar and roll to coat.
  5. Arrange the cookies about 2 inches apart on parchment-lined baking sheets.
  6. Bake for 10-12 minutes or until the cookies are set. Let them cool for 1 minute before transferring to wire racks to cool completely.
  7. Store in an airtight container for freshness.
