Gingerbread Buddies are spiced cookies filled with the flavors of cinnamon, ginger, and a hint of allspice, with a cute and crunchy twist in the middle.

Perfect for holiday get-togethers, these treats can be decorated with colorful frosting and candies for extra charm.

Ingredients
  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup molasses
  • 1/4 cup water
  • 5 cups all-purpose flour
  • 2 tsp 2-1/2 ground ginger
  • 1 tsp 1-1/2 baking soda
  • 1 tsp 1-1/2 ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp salt
  • Cinnamon bear-shaped crackers
  • Cinnamon Chex
  • Frosted bite-sized shredded wheat cereal
  • Frosting
  • 1 cups 1-1/4 confectioners' sugar
  • 5 tsp water
  • 1 tsp light corn syrup
  • 1/4 tsp vanilla extract
  • Paste food coloring
  • Assorted candies
Instructions
  1. In a large bowl, cream butter and sugar until light and fluffy, about 5-7 minutes.
  2. Beat in molasses and water until smooth.
  3. In another bowl, whisk together flour, ginger, baking soda, cinnamon, allspice, and salt. Gradually mix into the creamed butter mixture.
  4. Divide dough in half, shape into disks, and wrap in plastic wrap. Refrigerate for 1 hour until firm.
  5. Preheat oven to 350°F. Roll dough to 1/4-inch thickness on a lightly floured surface.
  6. Cut with a 3-1/2-inch gingerbread man cookie cutter, placing cookies 2 inches apart on ungreased baking sheets.
  7. Place a bear-shaped cracker, Cinnamon Chex, or shredded wheat piece in the center of each cookie. Fold the cookie arms around it, pressing lightly.
  8. Bake 12-14 minutes until edges are firm. Cool on pans for 2 minutes, then transfer to wire racks.
  9. In a small bowl, beat confectioners' sugar, water, corn syrup, and vanilla. Add food coloring as desired.
  10. Pipe frosting onto cookies and decorate with candies.
