In a small bowl, mix cornstarch with cold water until smooth.

Heat 2 teaspoons of olive oil in a large nonstick skillet over medium-high heat.

Add honey, soy sauce, salt, and pepper to the skillet. Continue to stir and cook until the chicken is cooked through, about 2–3 minutes. Remove chicken from the pan.
