Description

These honey-kissed whole wheat rolls are a delightful mix of fluffy and slightly sweet, with a touch of nutty wheat flavor. Simple to make and great to serve fresh from the oven with honey butter.

Ingredients
  • 4 to 4 5 cups bread flour
  • 1/4 cup sugar
  • 2 packages active dry yeast (1/4 ounce each)
  • 1 teaspoon salt
  • 1 cup 1 2% milk
  • 1 cup butter, cubed
  • 1/2 cup water
  • 2 large eggs, room temperature
  • 2 cups whole wheat flour
  • Honey Butter
  • 1 cup butter, softened
  • 7 tablespoons honey
  • Honey Glaze
  • 2 tablespoons honey
  • 1 tablespoon butter, melted
Instructions
  1. In a large bowl, combine 2 cups bread flour, sugar, yeast, and salt.
  2. In a small saucepan, heat the milk, butter, and water to 120°-130°F.
  3. Add warm liquid to dry ingredients; beat just until moistened.
  4. Beat in eggs, then stir in whole wheat flour and remaining bread flour as needed to form a soft dough.
  5. Turn dough onto a floured surface; knead until smooth and elastic, about 10 minutes. Cover and let rest for 15 minutes.
  6. Divide dough into thirds, roll each portion into a 20-inch rope, and cut each rope into 20 pieces. Shape each piece into a ball.
  7. Grease three 9-inch round baking pans; arrange 20 balls in each pan. Cover and refrigerate overnight.
  8. The next day, let dough rise in a warm place until doubled, about 1 hour and 15 minutes.
  9. Bake at 350°F for 18-22 minutes, or until golden brown.
  10. Meanwhile, in a small bowl, cream softened butter with honey until light and fluffy for honey butter.
  11. Once rolls are baked, remove them from pans and brush with the melted honey glaze.
  12. Serve warm with honey butter.
