These Italian marinated olives are a delicious appetizer, ideal for sharing. Marinated with garlic, herbs, and a little spice, they’re a crowd-pleaser that complements cheeses, meats, or bread.

Ingredients
  • 2 cans pitted ripe olives, drained (6 ounces each)
  • 1 jar pimiento-stuffed olives, drained (5-3/4 ounces)
  • 2 tablespoons finely chopped celery
  • 2 tablespoons finely chopped onion
  • 2 tablespoons capers, rinsed and drained
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
Instructions
  1. In a large bowl, combine the ripe olives, pimiento-stuffed olives, celery, onion, and capers.
  2. In a small bowl, whisk together olive oil, red wine vinegar, garlic, basil, oregano, red pepper flakes, and salt.
  3. Pour the oil mixture over the olives and toss to coat evenly.
  4. Cover and refrigerate for at least 3 hours to let the flavors develop.
