Ingredients
  • 3 tablespoons olive oil
  • 5 garlic cloves, minced
  • 1 teaspoon salt
  • 1 teaspoon each dried basil, thyme, and rosemary, crushed
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon pepper
  • 1 boneless pork loin roast (3 to 4 pounds)
  • 8 medium carrots, halved lengthwise
  • 2 medium onions, quartered
Step-by-step Process
  1. Mix the olive oil, garlic, salt, basil, thyme, rosemary, Italian seasoning, and pepper in a small bowl.
  2. Rub the seasoning mix over the pork loin roast.
  3. Place carrots and onions in the bottom of a 13x9-inch baking pan. Set the pork loin on top of the vegetables, fat side up.
  4. Cover the pan and refrigerate for 1 hour.
  5. Preheat the oven to 475°F. Roast the pork for 20 minutes.
  6. Lower the oven temperature to 425°F and continue roasting until the pork reaches an internal temperature of 145°F (about 30-40 minutes).
  7. Remove the roast from the oven, cover it loosely with foil, and let it rest for 20 minutes before slicing.
