Description

Olive focaccia is a delicious Italian bread made with a mix of black and green olives, a sprinkle of herbs, and a light drizzle of olive oil. It's perfect as an appetizer, side dish, or snack, bringing a burst of Mediterranean flavor to your table.

Ingredients
  • 1-1/8 teaspoons active dry yeast
  • 1/2 cup warm water (110°F to 115°F)
  • 1 tablespoon sugar
  • 1 tablespoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1-1/3 to 1-2/3 cups all-purpose flour
  • 2 tablespoons oil-packed sun-dried tomatoes, chopped
  • 2 tablespoons roasted sweet red peppers, drained and chopped
  • 2 tablespoons sliced ripe olives, drained
  • 5 Greek olives, sliced
  • 5 green olives with pimientos, drained
  • 2 tablespoons minced fresh parsley
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon shredded Parmesan cheese
  • 1 teaspoon shredded Romano cheese
Step-by-step Process
  1. Dissolve yeast in warm water in a large bowl.
  2. Add sugar, Italian seasoning, salt, pepper, and 1 cup of flour; beat until smooth.
  3. Stir in enough remaining flour to form a firm dough.
  4. Mix in sun-dried tomatoes, peppers, olives, and parsley.
  5. Knead the dough on a floured surface for 6-8 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover, and let it rise for about 50 minutes.
  7. Punch down the dough and shape it into a 9-inch circle on a greased baking sheet.
  8. Let it rise again for about 25 minutes.
  9. Dimple the top of the dough with your fingertips, brush with olive oil, and sprinkle with kosher salt and cheeses.
  10. Bake at 400°F for 14-18 minutes until golden brown.
  11. Cool on a wire rack.
