Ingredients
  • 1 bone-in leg of lamb (4 to 5 pounds)
  • Salt and pepper to taste
  • 2 cans plums, pitted (15 ounces each)
  • 2 garlic cloves
  • 1/4 cup lemon juice
  • 2 tablespoons reduced-sodium soy sauce
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried basil
Instructions
  1. Preheat your oven to 325°F.
  2. Place the lamb fat side up on a rack in a shallow baking pan. Season with salt and pepper.
  3. Bake uncovered for 1-3/4 to 2-1/4 hours until the desired doneness is achieved (135°F for medium-rare, 140°F for medium, or 145°F for medium-well).
  4. Drain the plums and set aside 1/2 cup of the syrup.
  5. In a food processor, combine the plums, reserved syrup, garlic, lemon juice, soy sauce, Worcestershire sauce, and basil. Blend until smooth. Reserve half of the sauce for serving.
  6. During the last hour of roasting, baste the lamb every 15 minutes with the remaining glaze.
  7. Simmer the reserved sauce in a small saucepan for 5 minutes.
  8. Allow the lamb to rest for 10 minutes before carving. Serve with the simmered plum sauce.
