Ingredients
  • 1-1/2 cups water
  • 1 can reduced-sodium beef broth (14 ounces)
  • 1/2 cup chopped shallots
  • 2 garlic cloves, minced
  • 1 tablespoon canola oil
  • 1 cup uncooked arborio rice
  • 1 tablespoon minced fresh thyme (or 1 teaspoon dried thyme)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup white wine or additional reduced-sodium beef broth
  • 1 cup sliced baby portobello mushrooms, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup mascarpone cheese
Directions
  1. In a saucepan, heat the water and beef broth; keep warm.
  2. In a separate large saucepan, sauté the shallots and garlic in oil for 2-3 minutes, until the shallots are soft.
  3. Stir in the rice, thyme, salt, and pepper, cooking for 2-3 minutes.
  4. Lower the heat, add the wine, and stir until the liquid is fully absorbed.
  5. Gradually add the warmed broth, 1/2 cup at a time, stirring constantly. Let the liquid absorb between each addition. Continue cooking until the risotto is creamy and the rice is nearly tender, around 20 minutes.
  6. Add the mushrooms and Parmesan, stirring gently until the cheese melts.
  7. Top each serving with a generous tablespoon of mascarpone. Serve immediately.
