Place the Chex cereal in a large plastic bag and crush it into fine pieces using a rolling pin.

In a large bowl, combine the crushed Chex, 1/2 cup of confectioner’s sugar, and peanut butter until evenly mixed.

Freeze the mixture for about 30 minutes, or until firm to the touch.

While the mixture chills, melt the semisweet chocolate in a microwave-safe bowl. Heat in 10-second intervals, stirring in between, until smooth.

Add the coconut oil to the melted chocolate and stir to combine.

Line a baking sheet with parchment paper.

Use a 2-teaspoon cookie scoop to portion the peanut butter mixture into 1-inch balls. Roll the balls between your hands to shape them and place them on the prepared baking sheet.
