  1. Melt the white chocolate in a microwave-safe bowl at 70% power for 1 minute. Stir and continue microwaving in 10-20 second intervals until smooth.
  2. Dip one end of each cookie into the melted chocolate, allowing excess to drip off. Place on wire racks.
  3. Sprinkle red sugar on the top part of the melted chocolate to create Santa's hat. Place one vanilla chip off-center on the hat for a pompom. Allow to set.
  4. Dip the other end of each cookie into the melted chocolate for Santa’s beard, leaving the middle uncovered. Place on wire racks.
  5. Attach semisweet chips for eyes and a Red Hot candy for Santa’s nose using a dab of melted chocolate. Let cookies rest on waxed paper until set.
