This Sweet Potato Pilaf is a warm, comforting dish with the perfect balance of tender sweet potatoes, crisp asparagus, and smoky bacon. Tossed with kale and nutty wild rice, it's a complete dinner that’s full of flavor and nutrition.

Ingredients
  • 1 cup uncooked wild rice
  • 2 1/4 cups vegetable broth or water
  • 1 teaspoon olive oil
  • 4 bacon strips, chopped
  • 1 pound fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 large sweet potato, peeled and chopped
  • 1/2 cup chopped red onion
  • 1 cup chopped fresh kale
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Chopped fresh parsley
Instructions
  1. Rinse and drain wild rice.
  2. In a large saucepan, combine wild rice, vegetable broth, and olive oil. Bring to a boil, reduce heat, cover, and simmer for 50-55 minutes until rice is fluffy and tender. Drain if needed.
  3. While rice cooks, heat a large skillet over medium heat. Cook bacon until crispy, then transfer to paper towels to drain.
  4. In the same skillet, add asparagus, sweet potato, and onion to the bacon drippings. Stir and cook over medium-high heat for 8-10 minutes, until sweet potatoes are crisp-tender.
  5. Add kale, garlic, salt, and pepper to the skillet. Stir and cook for another 8-10 minutes until vegetables are tender.
  6. Combine cooked wild rice, bacon, and vegetable mixture. Mix well and heat through.
  7. Sprinkle with chopped fresh parsley before serving.
